Does anonymization affect ATS parsing?

No. The anonymized CV remains structured and ATS-safe. Your client's ATS still parses it correctly.

Can I un-anonymize a CV later?

On Agency and Enterprise plans, you keep the original full CV separately and can release it to your client when the interview is confirmed.
